Chef Justin’s Easy Cheesy Chicken & Rice Skillet

A Simple Family Dinner That’s Ready in About 30 Minutes!

One of my favorite things about cooking is bringing people together around the dinner table. Not every meal has to be fancy to be delicious! Sometimes the best recipes are the ones that are easy to make, use simple ingredients, and leave everyone asking for seconds.

This Cheesy Chicken & Rice Skillet is one of my go-to meals because it’s filling, budget-friendly, and perfect for busy weeknights. Best of all, it’s made in just one pan, which means less cleanup and more time to enjoy with your family.

Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1½ cups shredded cheddar cheese
  • Fresh parsley (optional)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat. Add the chicken pieces and season with the garlic powder, onion powder, paprika, salt, and pepper. Cook for about 6–8 minutes, or until the chicken is fully cooked.

Step 2

Add the cooked rice, cream of chicken soup, chicken broth, and frozen vegetables. Stir everything together until well combined.

Step 3

Allow the mixture to simmer for about 5 minutes so the flavors come together.

Step 4

Sprinkle the shredded cheddar cheese over the top. Cover the skillet for 2–3 minutes until the cheese is melted and gooey.

Step 5

Garnish with fresh parsley if you’d like, then serve warm.

Chef Justin’s Tips

  • Rotisserie chicken works great if you’re short on time.
  • Try using broccoli, corn, peas, or your family’s favorite vegetables.
  • Add a little hot sauce if you like a bit of spice.
  • Leftovers make a great lunch the next day!
